Cheers to the weekend!

Holiday alternative to a turkey meal - Stuffed Cornish Hen + Veggies

Serves: 4


Ingredients

  • 1 Cornish hen (giblets optional)
  • 1 box Miss's Cubbinsons stuffing (any style)
  • 3 celery stalks diced
  • 1 large carrot diced
  • 1 large yellow onion 1/2 diced - 1/2 coarsely chopped
  • 1/4 butter 
  • 1 32 oz box chicken broth 
  • 1-2 tsp Salt (optional)
  • 2 tsp Garlic Pepper seasoning
  • 2 tsp Dried Thyme
  • 1 tsp Paprika 
  • 1 can cream of chicken soup 



Preparation 

 First thoroughly clean the Cornish hen  (& giblets if inside)

In a small pot add half of the butter, celery, 1/2 diced onion & carrots and sauté for about 6 mins

Next- if you have the giblets add now with half of the chicken broth, cook for about 10 mins

While that cooks, rub all seasoning onto and inside the hen. Add remaining butter in pieces, into the top skin of the hen as well as placing slices on top (or you can rub on with seasonings) 

Now- turn off the sautéed veggies and in patch's add in the veggie mix to 1/2 of the dried stuffing. Once mixed add the stuffing to the hen. You should be able to add all of the stuffing. Set aside. 

Take the remining onion and add it to the bottom of a crock pot with 1 cup chicken broth. Place the stuffed hen on top. Cook the hen on high for 4 hours or on low for 8 hours. 

Once the hen is done, take 1 cup of the juices from the crock pot and add to a sauce pot with 1 can of the cream of chicken soup, heat and mix. Take out hen, add stuffing and slices of the hen to a plate and top with gravy!

Spiced Apple Cider

Strawberry, Lime, Cucumber + Mint Infused Water

Strawberry, Lime, Cucumber + Mint Infused Water

Serves: 10


Ingredients 

  • 1 gallon apple cider
  • 1 apple cut in quarters
  • 6 drops On Guard doTERRA essential oil
  • 3 drops Baking Spice doTERRA essential oil
  • 3 Cinnamon sticks
  • pumpkin pie spice (to taste)


Preparation

In a crockpot on low heat, add all the ingredients and stir. Cover and leave to simmer for 30 - 40 minutes. 


*Add spiced rum if you'd like.

Serves: 8 

 

Ingredients 

  • 1 cup sliced strawberries
  • 1 cup sliced cucumbers
  • 2 limes, sliced
  • 1/4 cup fresh mint leaves
  • Ice cubes
  • Water

Preparation 

 In a half-gallon jar, or a 2 quart pitcher, layer the strawberries, cucumbers, lime slices, and mint leaves with the ice cubes. Fill jar or pitcher with water. Let chill for 10 minutes, and then enjoy!

Beet Margaritas

Strawberry, Lime, Cucumber + Mint Infused Water

Beet Margaritas

 Ingredients 


  • 1 cup tequila
  • chilled 1 cup beet juice
  • chilled ½ cup lime juice
  • 1 lime wedge 
  • ¼ cup triple sec 
  • 2 tablespoons simple syrup  
  • 1 tablespoon kosher salt (Optional)
  • Ice cubes


Preparation 

  • Combine tequila, beet juice, lime juice, triple sec and simple syrup in a pitcher.
  • If you want a salted rim, place salt on a small plate. Rub the rims of 6 glasses with the lime wedge and dip in the salt. Fill the glasses with ice and pour about 1/2 cup of the margarita mixture into each glass.
  • Enjoy!

Blueberry Mint Moscow Mule

Beet Margaritas

Serves: 1


  • 2 ounces Vodka
  • 2 ounces Ginger beer, chilled
  • 5 ounces Orange Juice


Preparation 

  • Fill a cocktail shaker with ice and add vodka and orange juice. Shake vigourously until well chilled.
  • Fill glass 3/4 of the way full over ice. Top with the ginger beer and stir. 
  • Enjoy!

Blueberry Mint Moscow Mule

  Serves: 2-4


Blueberry Simple Syrup

  • 1 cup Fresh blueberries
  • 1/2 cup Water
  • 2 Tbsp Sugar
  • 2 Sprigs of mint (6-8 leaves)

For Cocktail

  • 3 ounces Vodka
  • Juice of 1 Lime
  • 2-3 Tbsp Blueberry Mint simple syrup
  • 8 ounces Ginger beer, chilled

Garnish

  • Mint
  • Blueberries
  • Lime Wedges


Preparation 

  • Combine blueberries, sugar, and water in a small saucepan and simmer for 10 minutes, stirring occasionally. Take off heat, add the mint leaves and let cool to room temp. Strain liquid into a container and put into fridge to cool completely.
  • Fill a cocktail shaker with ice and add vodka, lime juice, and blueberry mint simply syrup. Shake vigourously until well chilled.
  • Fill mugs or glasses with ice and pour the blueberry mixture over the ice. Top with the ginger beer and stir. Garnish with mint, blueberries and lime wedges.

 Serves: 1 


Cranberry Simple Syrup

  • 2 cups Cranberries (fresh or frozen)
  • 1 cup Water
  • 1 cup Sugar

Cranberry Aperol Spritz

  • 1 ounce Aperol
  • 3 ounces Prosecco 
  • 1 ounce Cranberry simple syrup
  • Splash of Sparkling water

Garnish

  • Rosemary Sprigs
  • Cranberries


Preparation 

  • In a small saucepan stir together cranberries, water, and sugar. Bring mixture to a boil, then reduce heat and let mixture simmer until sugar completely dissolves. Take care because cranberries will pop. Remove from heat, cover, and let steep for 15 minutes.
  • Strain cranberries from syrup mixture and let cool completely.
  • Pour the sparkling wine into a glass of ice cubes. Add the Aperol, cranberry syrup and a splash of sparkling water. Garnish with cranberries and rosemary sprigs. 
  • Enjoy!

Apple Cider Bourbon Cocktail

Apple Cider Bourbon Cocktail

   Ingredients 

  • Bourbon
  • Apple cider (*homemade recipe is below)
  • Ground cinnamon
  • Granulated sugar
  • Rosemary sprig


  • Pour a small amount of apple cider in a low dish or small plate.
  • Mix equal parts ground cinnamon and granulated sugar in another bowl.
  • Dip rim of drinking glass of choice in apple cider then dip in cinnamon sugar mix to create a cinnamon-sugar rim. Add 2 parts bourbon and 4 parts apple cider, stir and serve with rosemary garnish.
  • Delicious hot or cold.

Homemade Apple Cider

Yield: 9-12 servings

Ingredients

  • 14 medium-sized assorted apples
  • 2 oranges
  • 3/4 cup brown sugar
  • 5-6 cinnamon sticks
  • 1 whole nutmeg
  • 1 tablespoons whole cloves
  • 1 teaspoon whole allspice

Materials

  • Water
  • Tall stockpot
  • Cheesecloth
  • Potato/avocado masher

Preparation

  • Wash fruit, cut into halves or quarters, and place in a large stock pot (seeds, peels and all) along with all other ingredients.
  • Fill with water, leaving about 2-3" of space from the top of the pot.
  • Boil uncovered for an hour, stirring frequently to prevent burn (an old New Englander tip to prevent boiling over is to put a wooden spoon across the top of the pot).
  • After an hour, cover and simmer for 2-3 more hours, crushing fruit with your masher and stirring occasionally. taste and add more sugar or seasoning to your liking.
  • Remove from heat, let it cool and strain all contents through cheesecloth into a clean container. Make sure to get every last drop from the cheesecloth, that's where the flavor is!
  • Pour into mason jars and keep refrigerated.
  • Serve hot with cinnamon stick garnish or, cold with bourbon

Apple Cider Bourbon Cocktail

Serves: 1


Ingredients 

For rimming the glass 

  • Light corn syrup (*we used honey)
  • Red food coloring
  • Red rimming sugar 

Ingredients

For the cocktail

  • 1 1/2 oz vodka
  • 4 oz Champagne
  • 1/2 oz Chambord (raspberry liquor)


Preparation  

  • Start by rimming the glass: Pour corn syrup onto a shallow plate until it’s thick enough to dip the rim of your martini glass in. Stir in the food coloring until you have the color red that you like, then dip the rim of the glass into the syrup. Turn the glass around so that some of the syrup is thicker on one side, you want an uneven layer for a more realistic blood drip.
  •  Turn the glass over to stand it up and let the syrup drip down the rim. Sprinkle on the rimming sugar, adding it to the top of the rim and down the sides 
  • Add the vodka to the glass and then top with champagne. Slowly pour in the Chambord liquor and serve. Enjoy

Recipes notes for the drip

 You can make the blood rims ahead of time but they will drip down over time, so not longer than 30 minutes ahead.

Pumpkin Spice Margaritas

Apple Cider Bourbon Cocktail

Pumpkin Spice Margaritas

Serves: 1 

 

Ingredients

  • 2 oz Repisado Tequila
  • 1 oz Cointreau
  • 1/2 oz fresh lime juice
  • 2 oz Pumpkin Spice Puree

Pumpkin Spice Puree

  • 1 cup light brown sugar
  • 1 cup water
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon ground clove
  • 1 (15 oz) can pumpkin puree
  • Note: this will make more puree than is needed for one cocktail. 

Spiced Rim

  • 2 Tablespoons coarse sea salt
  • 1 Tablespoon brown sugar
  • 1/4 teaspoon ground cinnamon
  • Cinnamon sticks for garnish
  • Lime wedges

Preparation 

  • In a sauce pan combine brown sugar, water and spices for the simple syrup. Bring to a simmer and and cook over medium-low stirring until sugar is dissolved. Remove from heat and cool completely.
  • Whisk in canned pumpkin once syrup is cooled and chill or set aside until ready to use.
  • Make the rim mixture by combining coarse sea salt, brown sugar and cinnamon on a small plate.
  • Wet the rim of your margarita glass with a lime wedge and dip in the salt mixture. Fill glass with ice and set aside to make the cocktail.
  • In a cocktail shaker filled with ice combine: 2 oz tequila, 1 oz cointreau, 1/2 oz lime juice and 2 oz of pumpkin simple syrup puree. Shake until well chilled.
  • Strain into prepared glass, garnish with cinnamon stick and enjoy!

Pumpkin Spice Margaritas

Serves: 1

 

Ingredients

  • 1 1/2 ounces Aperol
  • 3 ounces Prosecco 
  • 3/4 ounce sparkling water or club soda 
  • 1 orange slice, for garnish, optional


Preparation 

Fill a white wine glass halfway with ice. Add the Aperol, prosecco and sparkling water, and stir twice with a spoon. 

Serve with an orange slice if desired.

  • 8 oz. filtered water
  • Juice of 1/2 lemon

  • Organic liquid stevia

Ingredients  

  • 1/4 cup Pomegranate Juice
  • 2 tablespoons Braggs Organic Apple Cider Vinegar
  • 1 tablespoon honey
  • 1 1/2 cups water
  • Frozen or fresh pomegranate arils

Preparation 

  • In a small pot on low heat add all of the ingredients and whisk them together 
  • When the pot gets warm (2-3 mins) remove from heat, let cool
  • Pour over ice 
  • Top with pomegranate arils & serve

Pumpkin Mexican Hot Chocolate

Pumpkin Mexican Hot Chocolate

Serves - 2


Ingredients  

  • 1 whole tab Mexican hot chocolate (not powdered) Ibarra or Abuelita
  • 1/2 cup pumpkin puree
  • 1/4 cup baileys (liqueur of choice)
  • 4 cups milk of choice 
  • 1/2 cup water
  • 3-4 pks equal (or sweetener of choice) 
  • 2 cinnamon sticks
  • 4 large marshmallows


Preparation

  • Start by putting the cinnamon & water into a pot and bring to a mild boil 
  • Once it begins to boil, add the whole tab of chocolate to the water and stir constantly till the tab is dissolved
  • Once dissolved, add the milk and stir until well combined then add sweetener 
  • Take the cinnamon sticks out and discard. 
  • Continue to heat coco to your desired temperature
  • As it heats, toast your marshmallows on a flame proof stick over the stove or with a torch (be safe)
  • Pour the coco in your mug, top with liqueur of choice & add toasted marshmallows. YUM!

Bibi's Mulled Hot Apple Cider

Pumpkin Mexican Hot Chocolate

Pumpkin Mexican Hot Chocolate

Serves - 8+


Ingredients  

  • 1 6oz. packet pre-made mulled spices (we love Crown mulling spices)
  • 1 gallon apple cider
  • 1 bottle red or white wine (if you choose, we did)
  • 1 sliced orange
  • 1 chopped apple
  • 1 cup sliced pineapples (if canned use juice)


Preparation

  • Place all ingredients into a crock pot and stir
  • Place on high for at least an hour then stir again making sure all spices have mixed into the cider then leave on warm
  • Pour into your mug hot and drink up 
  • Also great served cold


*Suggestions: You can leave the wine till the end and pour over the warm cider and add a cinnamon stick for garnish! Cheers!

New Age Old Fashioned with essential oil

Lavender Lemonade Gin (or Vodka) Fizz with essential oil

Lavender Lemonade Gin (or Vodka) Fizz with essential oil

Serves - 1


Ingredients  

  • 2 oz whiskey or rye
  • 3 oz cherry juice (or to your tasting)
  • 1/2 fresh squeezed lemon juice 
  • 1-2 drop doTerra On Guard essential oil blend
  • 1 tsp maple syrup (for a sweeter preference)
  • Garnish with orange rind, lemon rind or a cherry


Preparation

  • Filler a shaker with ice. Layer ingredients in the shaker. Stir well and pour over ice (I like to use my square or round big ice cube for this) Garnish! 


*You can omit the whiskey and make it a mocktail

Lavender Lemonade Gin (or Vodka) Fizz with essential oil

Lavender Lemonade Gin (or Vodka) Fizz with essential oil

Lavender Lemonade Gin (or Vodka) Fizz with essential oil

Serves - 1


Ingredients  

  • 2 oz Gin or Vodka 
  • 4 oz doTerra lavender infused lemonade (see below)
  • 1 extra tsp of honey if you like it sweeter
  • 1 Fizz water
  • Garnish with a Lavender sprig 


Preparation

  • Fill shaker with ice. Layer ingredients (minus the fizz water) in shaker, stir well until very cold (gin is better stirred not shaken) Serve in a medium to tall glass. Pour Fizzy water last over the drink 

Lavender infused lemonade 

  • 1-2 drops doTerra lavender essential oil (doTerra only because it is pure and you can ingest) 
  • 4 oz Homemade or store bought lemonade


Place lemonade 7 lavender into glass, mix well and enjoy


*You can omit the alcohol and make it a mocktail
